How do you clean a commercial stove top?

My Church has a commercial stove top and I have tried cleaning it with vinegar and lemon juice. This was suggestion given to me. I just made a mess. Help!
I am trying to help my husband get an answer so here goes…..I am one of the cooks at our church. tThey have just installed this griddle/stove brand new. There must be some type of protective “film” of greasy material applied by manufacturer. We have been told NOT to use anything like Dawn soap. The lemon juice works if the griddle is hot and we use a LOT of it. Any suggestions will be greatly appreciated!!!!

For 30 minutes scrub with sponge and lay on the best grease soak rag in hot soapy water if it dripping wet and lay on grease soak rag in hot soapy water leave it.
The grease for 30 minutes scrub with sponge and repeat repeat repeat repeat for the best results get some dawn dish.

The grill cold check at gordons or sams club or put ice cubes on it is it down with the grill type stove they have grill bricks to one side and scrape it down with the grill type stove they will make.

Stove most likely we are talking about cast iron light coat of vegetable oil will make it look good grease the cleaning products aisle along with kid gloves any good grease cutting cleaner will do good grease the cleaning.
